Abstract
El estilo de vida del siglo XXI se ha caracterizado por dietas inadecuadas con predilección por alimentos y bebidas de alta carga calórica y altamente procesados, así como una reducida actividad física. Estos factores no sólo representan una carga significativa para la salud del individuo, sino también cambios epigenéticos importantes que predisponen a patologías como Diabetes Mellitus (DM), enfermedades cardiovasculares, cáncer y obesidad.
